The vanilla really comes through and keeps the peach from tasting too tart. I brewed a strong batch and used it as a syrup over pancakes, which was honestly better than maple.

Steeped a mug hot on a rainy afternoon and the vanilla really rounds out the peach instead of tasting artificial. Also tried it over ice with a splash of sparkling water and it made a decent little mocktail.

I've been making this as a cold brew concentrate and mixing it with sparkling water for mocktails, and the peach comes through without tasting artificial. The vanilla gives it a soft, creamy finish that's genuinely different from other fruit infusions I've tried.
