Vindaloo Curry Powder is a very spicy blend of chiles, cinnamon, ginger, cardamom, cloves and other spices with underlying turmeric, garlic and fenugreek. Vindaloo originated in Goa, a southwestern region of India that was a Portuguese province for 450 years, before it became part of India in 1961. The name derives from "carne de vinha d'alhos," which means "meat with wine and garlic" and was usually prepared with pork.

I was worried this would just be heat with no flavor, but the cinnamon and cardamom actually come through before the chiles kick in. Made a pork vindaloo with it and the sauce had real depth instead of just burning my mouth. The fenugreek and turmeric give it that earthy base I couldn't get from pla

This blend absolutely nails that fiery Goan kick—the chilies hit hard upfront but the garlic and fenugreek underneath keep it from being one-note. I used it in a slow-cooked pork curry and the heat lingered just right without scorching the whole dish. A little goes a long way, so start small if you'
