The cardamom and clove come through right alongside the chile heat, which is exactly what I want in a vindaloo rather than just pure burn. Used two teaspoons in a pork curry and it had that tangy, layered Goan flavor I've been chasing.

I was worried this would just be heat with no flavor, but the cinnamon and cardamom actually come through before the chiles kick in. Made a pork vindaloo with it and the sauce had real depth instead of just burning my mouth. The fenugreek and turmeric give it that earthy base I couldn't get from pla

This blend absolutely nails that fiery Goan kick—the chilies hit hard upfront but the garlic and fenugreek underneath keep it from being one-note. I used it in a slow-cooked pork curry and the heat lingered just right without scorching the whole dish. A little goes a long way, so start small if you'
